Sabrina is the mom of the family, she started out in catering after taking a barman course at the Hilton. She's worked in some of the best bars in Lazio and with the best bartenders in Italy, and she's also in charge of Monti's decoration and service.

The whole family came to the UK thanks to Enrico Jr. He arrived in 2013 with the dream of opening a restaurant, and his parents helped him do it.
