In 2003, the curtains rose on a new chapter as Shaun assumed the role of Head Chef at Bohemia restaurant, an exquisite culinary spectacle. The audience erupted in applause when, in 2005, he earned his first Michelin star, a coveted accolade. The chef then orchestrated his magnum opus, Ormer, in 2013, situated in the charming setting of St Helier. Just four months after the grand opening, the Michelin spotlight shone on Ormer, and shortly thereafter, it dazzled with three AA rosettes.

Following this triumph, Shaun returned to the dazzling lights of London, unveiling Ormer Mayfair and the restaurant at 12 Hay Hill in the illustrious district of Mayfair. The London stage welcomed him with open arms.

The climax of Shaun Rankin's culinary journey unfolded with the debut of "Shaun Rankin at Grantley Hall" in July 2019, where he reigns as Chef Patron. The critics showered praise, awarding the production its first Michelin star in January 2020, while four AA rosettes added to the standing ovation in September 2023.
