About Us
We took over Skylark in the summer of 2025 with a passion for locally sourced produce, seasonal stock and a strong background in hospitality! Both having grown up in Eastbourne, Skylark takes inspiration from our love of the local area especially the South Downs, we have stunning pictures of the surrounding areas available to purchase in the restaurant. We work with the best when it comes to local butchers, fishmongers, coffee roasters, tea suppliers, wine producers and everything in between prioritising quality.
